I'd suggest using a Macro.
I've tried it, based on recording the New date, then Rename action via Ctrl-F12, and it seems quite simple to use:
,STOP_IF_DW,
,n,F7,F7,SLEEP,RET,
,r,

Details (if needed):
It first sets New Date (Accessed) to Now, then calls the Rename function and ends,
leaving the 'Rename to' input-line open for you to enter the new filename.

Only drawback: if you decide to escape from Rename prompt, the Access date has already changed. (May not be that serious I suppose.)
