Changing the volume lable of a subst is not possible, because it's not a volume. You could change the volume lable of the underlying volume/drive, but that isn't what you want.

That part is asking for a different thing

Possibly update ZTree to display something like this
drive : Path (Label)
F : D:\F (T3T)




Another way

You switch from subst to loopback mapped drives, like this
net use F: \\localhost\d$\f

and do this, for mapped drives, you can set this to give drives custom names in Explorer
HKEY_CURRENT_USER\SOFTWARE\Microsoft\Windows\CurrentVersion\Explorer\MountPoints2\##ACER#acer-m\_LabelFromReg="Override label"


The ZEP would be for ZTree to display _LabelFromReg like this in the "Log, Up" dialog
drive : UNCPath (_LabelFromReg)
A : \\ACER\acer-m (label from registry)




Note
This can be used to get Explorer to put drive letters at the beginning, instead of at the end
HKEY_CURRENT_USER\SOFTWARE\Microsoft\Windows\CurrentVersion\Explorer\ShowDriveLettersFirst=dword:4
